This is something that warrants a physical exam from your vet. There are many reasons for weight loss ( it is usually an early indicator that something else is going on). Things that spring to mind with an older dog with poor appetite, shaking and a head tilt... vestibular syndrome (common in older dogs can be associated with deep inner ear infections, inflammation or no obvious cause) and other neurological issues. Really the best thing would be to make sure he gets a check up and your vet will most likely also suggest some blood work to help understand what is going on and guide the choice of medications to help . As for feeding the canned food, if that is all he will eat then that is good that he will at least eat that. Certainly encourage his appetite as much as you can either by warming his food a little, adding chicken or hand feeding if you have to. Good luck
