my, cat over the past 2 months has had 4 or 5 episodes where she lays down, her eyes dialate, she cries a deep yet loud meow and she starts panting. This lasts about 5 minutes, then she's back to normal again. What could this be?

There can be a number of things that can cause these symptoms, most of which are serious.  She needs to see a vet.  She could be in pain or be having difficulty breathing.

Could she be in heat? My freind found her about 4 years ago. adn I never got her fixed. I just assumed she was because she had a collar, but no tag. She's never gotten pregnant in the last 4 years either. or could it be her diet? She's recently become an indoor cat, since june. Maybe shes not getting the same nutrition from bring an outside cat? she's also had all of her shots in July.

Heat is not going to cause collapse or respiratory distress.  If she's not spayed, you would have seen signs of heat before now if you've had her for 4 years.  This is not diet related.
